WThis is an easy version of a drink from the seasonal menu. It's a batch prepared mix that's bursting with flavours associated with holiday season, making it perfect for a holiday party. Save the extra citrus syrup for morning drinks, desserts, or to make more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Place all the items inside a pan, heat until it reaches a simmer, stirring to dissolve. Next, remove from the stove and let it to reach room temperature completely. Transfer into a clean bottle, seal keeping it in the fridge, it can be stored for up to a month.
Preparing the Cocktail Base: Pour the specified liquid ingredients in a big jug, leave to sit for an hour, then filter it best through a fine cloth, making it fully clarified.
To serve: Pour 85ml of your batch mix into a cocktail shaker containing ice, and stir gently for about 60 seconds to chill. Strain to a frosted cocktail glass or equivalent, decorate with the cranberries and complete it by giving it a light spray of the essential oil above the glass.
